Responsibilities include but are not limited to:
Management and leadership of the kitchen team.
Plan cost and develop all menus.
Tailor and implement appropriate food control plans in accordance with the guidelines from MPI.
Ensure food standards, preparation, presentation and cooking techniques are established and monitored and maintained at that level. Work with the kitchen team and take corrective action where appropriate, and within company guidelines, if standards are not met.
Ensure the highest possible standard of hygiene is practised and maintained by the entire F&B Service team to meet Health & Safety regulations and HACCP food preparation guidelines.
Maintain a sound knowledge of the hotel’s procedures for purchasing food stocks, control of purchasing levels and ensure all necessary measures are in place to maintain budgeted food costs in all outlets.
Purchase all food products from the hotel’s preferred suppliers list.
Control the drafting of rosters, ensuring effective coverage within the restaurant’s annual manning and payroll budget.
Requirements
We seek team members with a great attitude, in addition to that the following skills will see you succeed in this role. At least three years of relevant experience may substitute for the formal qualifications listed below. In some instances, relevant experience and/or on-the-job training may be required in addition to the formal qualification. A qualification such as a certificate in Cookery (Level 4) will be an advantage.
Hotel Kitchen Management / Bachelor of Culinary Arts Level 5 or similar
NZQF Diploma (ANZSCO Skill Level 2)
Experience in a busy kitchen environment
Planning and organising skills and an ability to work individually and in a team
Ability to multi-task, show flexibility and meet deadlines, work under pressure
